The Thanksgiving turkey

The turkey is a large  poultry bird

related to the grouse and the pheasant.

Its name derives from its “turk-turk” call.

I think they are interesting creatures and I do love their meat, poor ones...

Down here in Brazil we eat roasted

turkey only on Christmas Eve.

Tell me, Mr. Turkey,
Don't you feel afraid
When you hear us talking
‘Bout the plans we've made?
Can't you hear us telling
How we're going to eat
Cranberries and stuffing
With our turkey meat?
Turkey, heed my warning:
You better fly away;
Or you will be sorry,
On Thanksgiving Day!

I think turkey is a tasty meat so why should us indulge ourselves only

on holidays? Here's a nice recipe which can be used any day!

Turkey cheddar sandwich

1 tablespoon honey
1 tablespoon coarse-grained mustard
1 plum tomato
4 slices 7-grain or whole-grain bread
3 ounces coarsely grated sharp Cheddar (about 3/4 cup)
1/4 pound sliced turkey breast
4 small radicchio leaves

Preheat broiler.

In a small bowl stir together honey and mustard. Slice tomato lengthwise.

Arrange bread on a baking sheet and toast under broiler until golden on

one side.  Turn bread over and spread honey mustard on untoasted sides.

Sprinkle Cheddar over honey mustard and broil until cheese is melted.

Arrange tomato, turkey, and radicchio between melted Cheddar toasts,

seasoning with salt and pepper.

Makes 2 sandwiches.

And here's my turkey farm! :o)
